Ingredients

4 TBS good quality olive oil 3 minced garlic cloves

1 shallot - minced

2 tsp tomato paste

1 tsp anchovy paste

1 pinch red pepper flakes(or more if you like it spicy) 1/4 cup chopped kalamata olives

1 TBS capers

1 cup sliced fresh grape tomatoes

2 TBS fresh basil - chopped

1 cup freshly grated parmesan cheese

1 lb Angel hair pasta

Salt for pasta water

Preparation

Heat olive oil in skillit over md/low heat. Add garlic and shallot. Cook 1-2 minutes. Whisk in tomato paste and anchovy paste. Combine well. Add the red pepper to your taste then the olives and capers. cook for 5 minutes over low heat. Add tomatoes. Cook another 5 minutes or until tomatoes are warm. Meanwhile boil water for pasta and add a TBS of salt to the water. Cook Pasta al dente. Add Pasta to the skillit and combine. Serve on plates - top with a TBS of parmesan cheese and a sprinkling of basil.
