Ingredients

2 lbs cooking apples (Gold Del., Gala, etc)

1 tablespoon Chinese Five Spice

If you don’t have Chinese Five Spice, mix 1/4 tbl cinnamon, 1/8 tb ground cloves, 1/4 tbl ground fennel, 3/8 tbl ground peppercorns.

Preparation

  1. Bring pot of about 8-10 cups of water to boil.
  2. Core and peel apples. Cut into 1 inch sections.
  3. Place apples in boiling water, boil for 8-10 minutes.
  4. Drain apples. Place into blender.
  5. Pulse the blender at the “soup” setting (medium), mixing with wooden spoon between pulses.
  6. Once the apple mixture is uniform in a consistency you’d like, place into wire mesh strainer. This will take out any clumps.
  7. Place mixture over med-high in a sauce pan. Mix in spices. Keep on heat and stir for about 10 minutes.
