Ingredients
For salad:
1 pint grape tomatoes
1 medium sized cucumber, skin on
1 large yellow bell pepper
1 container mozzarella balls
1 to 2 haas avocados (depending on size and taste preference)
several fresh basil leaves
salt and pepper to taste
For dressing:
1 - 2 limes, depending on size
1/4 cup good olive oil
10 cloves roasted garlic
salt to taste
Preparation
Chop all of the salad ingredients roughly and combine in a large bowl. To bring out the flavor of the mozzarella, salt lightly before adding to the chopped ingredients. To make the dressing, juice the lime, slice the roasted garlic, and wisk together with the olive oil until emulsified. Add salt to taste. Immediately toss the dressing with the salad ingredients and allow to sit at least 10 minutes to allow flavors to blend. (The lime juice will keep the avocado from browning.) Recipe can easily be adjusted to suit number served and taste.
