Ingredients
1 c green lentils
1 large clove of garlic
1 Vidalia or red onion chopped fine
2 carrots cut into small dice
1 stalk of celery cut into small dice
1/2 c fresh cilantro chopped fine
3 tbs fresh lemon juice
1 tbs balsamic vinegar
2 tbs olive oil
salt and pepper to taste
Preparation
- Crush the garlic clove and add it and the lentils to simmering salted water. Simmer 10 minutes then drain and discard the garlic
- While the lentils are cooking chop the onion, carrot, celery, and cilantro.
- Wisk together the lemon juice, vinegar, and olive oil in a large bowl.
- Add the lentils, chopped vegetables, and cilantro. Toss to combine. Add salt and pepper if desired.
Serve hot or cold, inside or outside!
