Ingredients

1 c green lentils

1 large clove of garlic

1 Vidalia or red onion chopped fine

2 carrots cut into small dice

1 stalk of celery cut into small dice

1/2 c fresh cilantro chopped fine

3 tbs fresh lemon juice

1 tbs balsamic vinegar

2 tbs olive oil

salt and pepper to taste

Preparation

  1. Crush the garlic clove and add it and the lentils to simmering salted water. Simmer 10 minutes then drain and discard the garlic
  2. While the lentils are cooking chop the onion, carrot, celery, and cilantro.
  3. Wisk together the lemon juice, vinegar, and olive oil in a large bowl.
  4. Add the lentils, chopped vegetables, and cilantro. Toss to combine. Add salt and pepper if desired.

Serve hot or cold, inside or outside!
