Ingredients

4 tbsp olive oil

4 cloves garlic

4 lbs ripe tomatoes (6 medium sized)

1/4 tsp salt and pepper

1 lb rigatoni cooked

Preparation

  1. In skillet, heat oil on medium high until hot. Add garlic, cook 1 minute or until golden.
  2. Add tomatoes, salt, pepper; cook uncovered 10 mins or until lightly thickened.
  3. Remove from heat and serve over rigatoni.
