Ingredients

1/4 cup rice-wine vinegar, or lemon juice 

1 teaspoon Dijon mustard 

Coarse salt and freshly ground black pepper 

3/4 cup extra-virgin olive oil 

1/2 teaspoon sugar (optional) 

Preparation

Combine all ingredients in a jar; shake to mix. Store in jar, refrigerated, for up to 1 week.
