Ingredients
Eclairs:
1 cup water
1/2 cup margarine
1 cup unsifted flour
4 eggs
Heat water and butter to a “rolling” boil. Stir in the flour all at once, over low heat. Beat until a ball is formed. Take off the heat and cool, beating in eggs one at a time. Spoon onto a cookie sheet. Bake at 400 degrees for 35 minutes.
Filling:
1 cup milk
2 cups cream
2 packages of instant pudding
1 teaspoon vanilla
Mix together pudding, milk, cream and vanilla, whip on high with a kitchen aid until stiff.
Chocolate Glaze:
1 tablespoon of cocoa
1 tablespoon of butter
1 tablespoon of milk
1/2 cup powdered sugar
1/2 teaspoon vanilla
Melt the cocoa and butter together. Take of heat and stir in the other ingredients until smooth. Drizzle over the eclair.
