Ingredients

1 lb Shrimp (21 - 25 count per pound)

¼ cup olive oil

3 tbsp. Butter ( clarified preferred )

¾ cup white wine ( or chicken stock )

parsley, chopped

3-4 cloves garlic, minced

1 small onion chopped

1-3 cloves shallot

1 tsp. Oregano

1 tsp. Basil

fresh ground pepper

sea salt to taste

Preparation

  1. In a large skillet ; Heat olive oil and sauté onion, shallots and garlic 2-3 minutes. Then add oregano and basil sauté 1 minute more.
  2. Pour wine or stock into pan and reduce ( 5 minutes ).
  3. Add shrimp and heat completely. Stir in butter and add parsley. Add salt and pepper to taste.
  4. Serve with pasta or over rice.
