Ingredients

1 Boca Burger (about 100 calories)

1/2 cup shelled frozen edamame

1/2 cup beans

1-2 cups assorted veggies, like:

1 onion chopped

3-4 cloves garlic chopped

1/2 cup carrots chopped

1/2 cup celery chopped

red bell pepper chopped

Chopped fresh parsley

1/4 cup nonfat yogurt or 3 Tablespoons of nonfat sour cream

1/2 lemon

salt and pepper

2 tablespoons tomato paste

2 tablespoons chili powder

Preparation

Step 1, preparations: Chop the assorted veggies and place in a bowl. Spritz with some pam to coat. (chop the parsley, but leave out). Pre-heat the Boca-Burger, 1/2 cup beans, and 1/2 cup edamame in the microwave according to their directions. Chop the boca burger, place the boca-bean-edamame in a bowl, and Set aside.

Step 2: Cook: Take a nice pan, spritz with PAM, and put over a medium flame; Add the veggies, and cook down for about 5 minutes (do not overcook, you want veggies to retain some crunch and texture). Now, add salt and pepper to taste, the chili powder, the 2 tblsp of tomato paste, the juice of 1/2 lemon, and the chopped boca burger, edamame, and beans. Stir, and cook together for about 2 minutes. Add 1/2 of the parsley, and cook a few seconds more, then pour into a large serving bowl.

Step 3: Place dollops of nonfat yogurt or nonfat sourcream on top, and sprinkle with remaining parsley.
