Ingredients

1/4cup extra-virgin olive oil

2Tbsps. Sherry wine vinegar

2Tbsps. Balsamic vinegar

2 pinches crushed coriander seeds

1 pinch white pepper

1 pinch kosher salt

1 lb. bag of Edamame

3-4 medium red tomatoes

Feta Cheese

Fresh Sweet Basil

Preparation

Mix first 6 ingredients until well blended with whisk. Blanch edamame soy beans in a big pot of boiling water, then cool under cold water. Set aside in a salad bowl. Crumble in some feta cheese and cut up in a chiffonade(roll) the basil. Also small dice the tomatoes and add to the salad bowl. Toss with dressing. Divide and serve.
