Ingredients

2 cups edamame

1 cup feta cheese (crumbled)

1 cup thinly shaved red onion

1 1/2 cups chopped tomato

1/2 cup cilantro (chopped, basil can be a good substitute if you don’t have cilantro)

2 lemons

1 tbsp extra virgin olive oil

salt and pepper to taste

Preparation

Combine all ingredients (except the oil) in a mixing bowl.

Juice lemons into bowl then add all other ingredients.

Toss thoroughly. Add salt and pepper let sit in juice for 2 minutes.

Toss again and drain juices in strainer. Return to bowl and chill for 15 minutes.

Before serving add 1 tbsp oil and toss.
