Ingredients
2 tbsp olive oil
8 oz ground pork
1/2 onion, chopped
1 tbsp minced garlic
1 tsp ground cumin
1 1/2 cups chopped tomatoes
2 cups shelled edamame
salt
pepper
cilantro
Preparation
In olive oil, cook pork until brown and crisp. Remove pork from the pan and pour off all but 2 tablespoons fat. Cook onion and garlic until soft, about 3 minutes. Add cumin and tomatoes - cook 10 minutes. Stir in edamame and cook until tender (about 8 minutes). Return pork to the pan, season with salt and pepper, and garnish with cilantro.
