Ingredients
12 oz. pkg Edemame (you may want to increase the dressing ingredients
by half if using a 16oz. pkg.)
2 Tbl Olive Oil
1 Tbl Dijion Mustard
1 tsp Lemon Juice
1 clove garlic, chopped (
1 Tbl rice wine vinegar
half a yellow or red bell pepper
3 roma tomatoes diced
1/2 cup red onion chopped
Preparation
Combine dressing ingredients in a bowl then toss with edemame and veggies
