Ingredients

2 pounds russet or red potatoes

2 tablespoons cider vinegar

1/2 teaspoon salt

2 cups mayonnaise or salad dressing

2 chopped scallions

1 tablespoon dijon mustard

1 tablespoon pickle juice

1 teaspoon sugar

3-5 chopped hard boiled eggs

1/4 cup diced pickle (dill)

Preparation

Boil desired number of eggs.

Boil, peel, and cube potatoes (if using red potatoes, can leave some of the skins on). Toss potatoes with cider vinegar and salt.

In separate bowl, mix mayonnaise, scallions, dijon mustard, pickle juice, sugar, 3 chopped hard boiled eggs, and pickle. Toss with potatoes.

Optional: if you made two additional eggs, slice and place on top of salad.
