Ingredients

12 oz potatoes

2 tbsp olive oil

1 onion, chopped

1 zucchini, coarsely grated

7 oz canned corn, drained

6 eggs

1 cup crumbled feta

Salt & pepper

Paprika, to garnish

Preparation

1- preheat broiler and prepare potatoes, dice 1/2 inch cubes 2- cook potatoes until tender, drain 3- heat oil in oven-proof skillet, cook onions untill softened 4- stir in zucchini and potatoes, cook for 2 minutes. Add corn 5- beat eggs and season with s&p 6- stir eggs into skillet, add feta. Cook for 4-6 minutes, untill almost set. 7- put torilla under broiler for 2-3 minutes or untill golden brown 8- garnish with paprika and serve
