Ingredients
1 medium eggplant
1 tsp cumin seeds
1 red onion, chopped
4 cloves garlic, chopped
2 tomatoes, chopped
1 tbsp garam masala
Preparation
Cook the eggplant under a broiler for 15 minutes, turning every 5 minutes. Chop up.
Melt butter in a saucepan on medium high heat; add cumin seeds and cook for 30 seconds. Turn down heat to medium, add onions, and cook under soft and caramelized, approximately 25 minutes. Add garlic and cook for 2-3 minutes. Add tomatoes; cook for 5 minutes. Add eggplant and garam masala, and cook for 3 minutes more. Add salt to taste.
