Ingredients

1 medium eggplant

3/4 cup milk

2 eggs, beaten

1/2 stick melted butter

1 med onion,chopped

2 cups dry bread crumbs

3/4 cup shredded cheddar

Preparation

peel eggplant,cut into 1 inch cubes,cook in boiling water 8 mins,drain,add eggs,milk,butter,onion,bread crumbs and cheese,place into a greased casserole dish,bake at 300,1 hour,top with more cheese
