Ingredients

2 medium size eggplants

2 slices white bread crust removed

2 tbls cream

2 clove of garlics crushed

Juice of 1 lemon

2 spoons finely chopped almonds

2 tbls spoons of grated Parmesan cheese

1/2 cup Extra virgin Olive oil

Preparation

Pre-heat oven to 400 degrees cut eggplants in half place on baking sheet cut size down bake until eggplant is soft appx 30 - 40 min place bread in bowl cover with cream soak until bread is soft Scrap roasted eggplant into bowl Squeeze bread to remove excess cream Add to eggplant Add rest of ingredients to eggplant stir and refrigerate until ready to serve
