Ingredients

1/2 cup olive oil

1 medium onion/diced

3-4 diced cloves of garlic

1 lb. Italian sausage

(removed from casing)

crushed red pepper flakes

salt to taste

1 med. eggplant/diced

fresh shredded mozzarella

Parmesan cheese

1 jar of Ragu tomato sauce

Preparation

warm olive oil in skillet add onion cook until translucent add garlic,sausage,red pepper, salt Cook until tender/set aside

Cook 1-lb. penne until tender drain then return to pot add eggplant mixture/mix

Layer pasta/eggplant mixture with fresh shredded mozzarella and parmesan cheese Bake in 350 oven until warmed.
