Ingredients

1 medium-large eggplant

1/2 small onion

2/3 cup oatmeal

1 cup bread crumbs

1 tsp garlic powder

1 tsp dried thyme

salt & pepper

Preparation

-Cube eggplant -boil for 3 minutes -drain well -food process -add all other ingredients. -Mix evenly -Shape into patties. Try not to handle them too much as they will crumble -Heat up skillet with a layer of hot olive oil. -Pan fry until firm -Serve or freeze!

*These thaw well in a toaster oven :)
