Ingredients

4 eggs

4 slices canadian bacon

2 english muffins

2 cups fresh spinach, chopped

1 package hollandaise sauce

butter

salt & pepper

Preparation

Slice english muffins in half and toast.

Cook canadian bacon in pan

In a medium saucepan prepare the hollandaise sauce. Add spinach and let simmer.

Cook eggs in an egg poacher.

Place toasted english muffin on the plate, spread butter, place cooked canadian bacon on muffin, add poached egg and top with spinach hollandaise sauce.
