Ingredients

8 oz grated Swiss cheese

4 tblsp butter

1 c heavy cream

1/2 tsp salt

Dash pepper

1 tblsp Dijon mustard

1 box (10 oz) frozen leaf spinach, thawed and well-drained

8 eggs

Preparation

Grease a 9X9 or rectangular baking dish. Spread the grated cheese on the bottom of the dish. Dot with butter. Mix the cream with the seasonings. Pour half of the cream mixture over the cheese. Top with spinach. Add the eggs (lightly beaten). Pour the rest of the cream mixture on top. Bake at 350F degrees for 40-45 minutes.
