Ingredients

10 eggs

2 tbsp.sour cream or cream fraiche

1/2 tsp.Mild Dijon

1 tsp. goose fat or butter

1 tsp. mayonaisse.

3 oz. mushrooms

salt,pepper to taste

parsley and Dill

Preparation

Hardboil the eggs,cool and cut in half the length; remove and retain the yellows. boil mushrooms, done; drain and chop; drain. Mix yellows,Butter,Mayonnaise,Sourcream,salt,mustard and pepper with the Mushrooms. Divide equally among the halves. garnish liberally with chopped or sprigs of parsley and Dill.
