Ingredients
3tbsp olive oil
1 onion
1 red pepper
2 cloves garlic
4 potatoes cut into cubes
1/2c water
2tbsp tomato paste
1/2tsp hot pepper sauce
salt and pepper
4 eggs
cilantro
Preparation
In large skillet, fry onion about 5 mins. Add red pepper and fry for 3 mins. Stir in garlic and potatoes to coat with oil.
Mix water, tomato paste and hot sauce. Add to skillet.
Reduce heat, cover and cook until potatoes are tender - about 20-25 mins. Season with salt and pepper.
Increase heat. Add eggs on top. Cover and cook for about 5 mins. Top with cilantro.
