Ingredients
1 English muffin(wholewheat or rye)
2 large eggs
200g smoked salmon
50g Cream cheese
1 cup Arugula
Mustard dill sauce
lemon…..obvs
salt and pepper
Preparation
- Boil water in pan and poach eggs
- Split muffin/bread in half and toast
- Spread each half with cream cheese and layer arugula and smoked salmon on top.
- Add mustard dill sauce and lemon to taste. 5.Place poached eggs on top of each stack and season with salt and pepper.
- Make sure it looks nice……….then go to town on it!!!!
