Ingredients

1 English muffin(wholewheat or rye)

2 large eggs

200g smoked salmon

50g Cream cheese

1 cup Arugula

Mustard dill sauce

lemon…..obvs

salt and pepper

Preparation

  1. Boil water in pan and poach eggs
  2. Split muffin/bread in half and toast
  3. Spread each half with cream cheese and layer arugula and smoked salmon on top.
  4. Add mustard dill sauce and lemon to taste. 5.Place poached eggs on top of each stack and season with salt and pepper.
  5. Make sure it looks nice……….then go to town on it!!!!
