Ingredients

Batter:

1 pint of fresh or frozen blueberries

1 Tablespoon lemon juice

1/4 cup softened butter

3/4 cup organic sugar

1/2 cup milk

1 cup flour

1 teaspoon baking powder

1/2 teaspoon salt

Topping:

1/4 cup of organic sugar

1 tablespoon cornstarch

1/2 teaspoon salt

Preparation

Grease an 8x8" square pan.

Preheat the oven to 375 F.

Put 1 pint of fresh or frozen blueberries in the bottom of the pan and sprinkle with 1 tablespoon of lemon juice. Set aside.

Cream together 1/4 cup softened butter and 3/4 cup organic sugar.

Add 1/2 cup milk, 1 cup flour, 1 teaspoon baking powder, 1/2 teaspoon salt.

Spread over berries - it will be thick so it needs to be done by the spoonful. Do not stir.

Topping: Mix in bowl 1/4 cup of organic sugar, 1 tablespoon cornstarch and 1/2 teaspoon salt. Sprinkle over batter.

Pour on 1 cup boiling water. DO NOT STIR IN.

Put in the oven and bake for 45 to 60 minutes. (Use the longer time if berries were frozen, shorter time if fresh.)
