Ingredients
3 egg yolks
3/4 stick butter- chopped small slices
1/4 cup boiling water
Essence:
1 small onion
1/4 cup vinegar
1/4 cup white wine
pepper
2 tbsp. tarragon
Preparation
Place all the ingredients for the Essence in a small boiler and reduce to 2-3 Tbsp. of liquid.
Bring water in another boiler to a boil then decrease to a strong simmer. Bernaise will set faster if water in boiler is just touching the bowl.
Us a glass bowl and work quickly. Always whisk.
Whisk the egg yolks until frothy then drizzle with water.
Add the butter pieces as the previous piece melts.
Dum in the Essense and whisk until the mixture congeals. (will take approx. 8-10 minutes)
