butter

confectioners sugar

2 tablespoon gelatin

1/2 cup cold water

2 cups granulated sugar

3/4 cups boiling water

1/8 teaspoon salt

1 1/2 teaspoons vanilla extract

Preparation

  • butter an 8x8 inch baking dish. line with waxed paper, butter then lightly coat with confectioners sugar

  • dissolve gelatin in cold water in stand mixer bowl

  • in a large saucepan over medium heat, whisk together granulated sugar, boiling water and salt. bring to a boil, whisking frequently. cook until 230-240 degrees F

  • pour syrup over gelatin. add vanilla extract. beat on medium speed for 15-20 minutes or until thick and cool

  • butter a spatula and scrape marshmallow cream into dish. smooth surface. leave out uncovered overnight, then remove waxed paper from disk, lifting out marshmallows. pull paper off and cut into shape.
