Ingredients
dry ingredients:
1/2 cup oat bran
1/2 cup whole wheat flour, or all-purpose flour
1 TBS. sugar
1 tsp baking powder
1/2 tsp baking soda
dash salt
dash nutmeg
dash and a half cinnamon
wet ingredients:
1 1/2 mashed bananas
1/3 cup yogurt (regular or greek, any flavor!)
1 egg white
1 1/2 TBS melted butter
10 walnut halves chopped (other nuts can be used)
Preparation
Preheat oven to 400 degrees. Prepare 6 muffin cups or a 6 muffin baking tin.
Mix all dry ingredients. Then add and mix wet ingredients. Once all of the above are mixed well, add walnuts and mix. Scoop evenly into muffin cups. Bake for 18 minutes.
