Ingredients
1 ½ pounds Idaho potatoes
Vegetable oil
3 tablespoons flour
½ cup chopped shallots
1 ½ teaspoons salt
1 ½ teaspoons black pepper
Empire’s Steak chopped into bits
Preparation
Using a food processor shred the potatoes. Drain the shredded potatoes. Chop the cooked steak into bits. In a bowl, mix the steak, eggs, shallots, flour, salt and pepper. Add the potatoes to the above mixture and combine. In a large skillet, add vegetable oil and heat until oil appears hot. Place tablespoonfuls of the latke mixture and allow them to cook for approximately 3 minutes on each side. Empire’s Steak and Potato Latkes are best served warm with a side of sour cream.
