Ingredients

•1 ½ pounds Idaho potatoes

•Vegetable oil

•3 tablespoons flour

•½ cup chopped shallots

•1 ½ teaspoons salt

•1 ½ teaspoons black pepper

•Empire’s Steak chopped into bits

Preparation

•Using a food processor shred the potatoes. •Drain the shredded potatoes. •Chop the cooked steak into bits. •In a bowl, mix the steak, eggs, shallots, flour, salt and pepper. •Add the potatoes to the above mixture and combine. •In a large skillet, add vegetable oil and heat until oil appears hot. •Place tablespoonfuls of the latke mixture and allow them to cook for approximately 3 minutes on each side. •Empire’s Steak and Potato Latkes are best served warm with a side of sour cream.
