Ingredients
Roasted Chicken
2 Jalapeno Peppers
4 cloves garlic
6T EVOO
2 Limes, quartered
Mexican shredded cheese
Mexican Rice
Black Beans
Preparation
Start mexican rice in a pot, and beans in a separate pot.
Shred the chicken using a fork.
Quarter the limes, set aside.
Dice jalapenos & garlic.
In a large sauce pan, saute jalapenos and garlic until brown, then add chicken.
When finished cooking, layer in a small bowl or baking dish… Rice, Beans, Chicken, and top with shredded cheese and a wedge of lime.
