Ingredients

1 1/2 pounds ground beef

1 c. chopped onion

1 1/2 c. peas

1 pound frozen hash brown potatoes, thawed

3 cans El Paso enchilada sauce, divided

1 1/2 c. shredded Cheddar cheese

10 whole to 12 whole tortillas

additional shredded Cheddar cheese

Preparation

Brown ground beef with onion. Drain.

Mix meat mixture, peas, hash browns, 1 can enchilada sauce and 1-1/2 c. cheese.

Cut tortillas into bite-size pieces.

Dunk the equivalent of 5 or 6 cut-up tortillas in remaining enchilada sauce and place on bottom of 9-by-13-inch pan.

Pour meat mixture on top of tortillas in pan.

Dunk remaining cut-up tortillas in sauce and place on top of meat mixture.

Pour remaining sauce over casserole.

Bake at 350 degrees for 30 minutes.

Sprinkle additional cheese on top and bake for 5 additional minutes, or until cheese melts.
