Ingredients
1 package flour burrito tortillas
2 cups cubed cooked chicken
1 cup instant brown rice
8 oz shredded taco blend or monterey jack cheese
19 oz red enchilada sauce
1 can shoepeg corn
1 cup salsa
2 tbls salsa
6 oz sour cream
Preparation
heat oven to 350. Pam spray 9" round glass baking dish. In large bowl combine chicken, rice, 1 cup of cheese, 1 cup enchilada sauce, mix well. 2. line bottom of baking dish with 2 tortillas (tear as needed). top with 1/4 cup enchilada sauce and then half the chicken mixture. layer with 2 more tortillas, 1/4 enchilada sauce, rest of chicken mixture. Top with remaining tortillas, remainder of enchilada sauce, remainder of cheese, and 2 tablespoons scallions. 3. Bake at 350 for 35 to 45 minutes or until cheese is melted. Cool 5 minutes. Top with sour cream and scallions.
