Ingredients
3-4c cooked shredded chicken
8oz shredded pepper jack cheese
1c sour cream
4oz. green chilis
1/3c chopped cilantro
8 8" flour tortillas
1/2c green enchilada sauce (salsa verde)
Preparation
combine chicken,cheese, 1/2c sour cream,chilis,and cilantro spoon mixture into tortillas and firmly roll arrange in a 9x13" greased baking dish coat tortillas with cooking spray and bake 40 min at 350 (until golden brown) Stir together remaining sour cream and enchilada sauce and spoon over hot enchiladas. Garnish to taste.
