Ingredients

Meat:

1 lb ground beef

1 lb sausage meat (remove casing)

1 lb stew beef chunks (cut into 1 inch pieces, or smaller)

Everything else:

1 15 oz can kidney beans

1 can baked beans

1 can pinto beans

4 pieces chipotle chiles (canned)

2 30 oz cans crushed tomatoes with puree

Seasonings:

1 large onion

3 tbsp chili powder

3 tbsp paprika

2 tbsp oregano

1 tbsp cumin

3 cloves garlic

salt to taste

Topping:

shredded cheese, Monterrey Jack

diced green onions

Fritos chips

Optional:

Serve over corn muffins or rice

Preparation

  1. Dice onions and sauté with oil on medium high heat
  2. Add all seasonings, stir for a minute
  3. Add all meat and salt, brown the meat 5 min
  4. Add everything else, cook on low heat for at least 2.5 hours
