Ingredients
1 clove garlic, minced
4 T melted butter
1 C chopped fresh or canned mushrooms
1 C crushed butter flavor crackers (about 25)
2 T fresh minced parsley
1/2 t salt
1/8 t fresh ground pepper
6 medium (or 3 large) ripe tomatoes, quartered
Preparation
In a large skillet, saute garlic in 2T butter for 2 minutes. Add mujshrooms; cook until heated through.Add cracker crumbs, parsley, salt, pepper and remaining butter; mix well. Place quartered tomatoes in a greased 8" square baking dish. Top with mushroom mixture. Bake, uncovered at 400 deg for 20 minutes, or until heated through.
