Ingredients
1 1/2 cups Essential Eating Sprouted Flour
1/2 cup maple syrup or agave nectar
2 teaspoons baking powder
1 teaspoon cinnamon
1/4 teaspoon sea salt
1/4 teaspoon nutmeg
2 large eggs
2/3 cup yogurt
1/2 cup butter, melted
1/2 cup chopped dates
1/2 cup chopped prepared almonds (optional)
Preparation
In a bowl, combine the flour, maple syrup or agave nectar, baking powder, cinnamon, salt and nutmeg. In another bowl, whisk together the eggs, yogurt and butter. Stir this mixture into the dry ingredients and whip or beat with a hand mixer briefly until well mixed. Fill greased or paper-lined cups of a muffin tin two-thirds full. Bake at 400 degrees for 15-20 minutes, or until a toothpick comes out clean. Cool for 5 minutes before removing to a wire rack.
