Ingredients
1 Onion
1 Full Bulb of Garlic
1 Green and 1 Red Pepper
3 Stalks Celery
1/4 Cup Flour
1/2 Cup Olive Oil
Meat of Choice (Chicken, Shrimp, Crawfish, Sausage)
Chicken Broth
Cajun Seasoning
Basil
Preparation
Make a Roux by stirring oil with flour till brown. Saute onion with garlic until translucent. Stir in peppers and celery. Cook down. If meat is uncooked, you can add it here.
Add small amounts of broth until desired thickness. You can also add some Bourbon if desired.
Add meat if it’s seafood. Add seasoning to taste.
Serve over rice.
