Ingredients
For Gyros:
1/2 lb ground lamb
1/4 cup onion, chopped
1/4 cup chooped fresh parsley
1 garlic clove, chopped
1/4 cup panko bread crumbs
salt & cayenne pepper to taste
2 pita bread
1 cup iceberg lettuce, shredded
Feta Yogurt Spread
1/2 cup greek yogurt
1/4 cup crumbled feta cheese
4 tsp fresh lemon juice
4 tsp olive oil
1 tsp oregano
salt & pepper to taste
Greek Salsa
1/4 cup tomato, sliced
1/4 cup cucumber, seeded and diced
2 T red onion, diced
juice of 1/2 lemon
Preparation
For gyros: Preheat the grill to high. Mince the parsley, onion, garlic together in a food processor, then mix into lamb in a large bowl. Mix in breadcrumbs and seasoning. Duvide meat into 4 portions, forming each into a cylinder about 4" long and 1" wide. Insert a skewer. Coat with nonstick spray. Grill kebabs, covered, turning occasionally until cooked through, about 8 minutes.
Cut the pita in half to make 4 pocket pieces, and warm the pita on the grill. To assemble, fill pitas with lettuce, place a kebab inside, remove skewer and top with spread and salsa.
For spread: Combine all ingredients in a bowl and chill until ready to serve.
For salsa: Stir all ingredients together ina bowl, let stand at room temperature until ready to serve.
