Ingredients

1 large onion cut in half and thinly sliced

1 stalk celery diced

3 cloves garlic, finely chopped

7 mushrooms, sliced

2 tablespoons chili powder

1 tablespoon cumin

1 teaspoon black pepper

1 48oz can diced tomatoes + 1/2can water

2 tablespoons mixed italian herbs, Oregano thyme basil parsley

Preparation

Water saute onion, garlic, celery and mushrooms in large nonstick pan for 5 min. Add chili powder,cumin and pepper.Cook 1 or 2 min more to release flavors. Add tomatoes, water and herbs. Stir together. Lower heat,cover with screen lid and simmer for half hour to reduce liquids.

This very versitile sauce can be used on vegi burgers, with beans, in wraps,and even on salads when used cold. I have it in the fridge always.
