Ingredients

1.7 lbs ground beef

1 red cabbage

1 large onion

fresh or frozen peas (i used 1/2 bag frozen)

3 carrots, sliced julienne

1 can chick peas

1 can black beans

Cherry Chipotle pepper sauce (bottle - sauce isle in supermarket)

curry powder

Thai spice (Spice Islands)

rice vinegar

olive oil

salt

rice

Preparation

  1. brown the ground beef
  2. combine olive oil, cherry chipotle sauce, curry, and Thai seasoning, and some rice vinegar (I winged it so no measurements) and cook the red cabbage in pan or wok over high heat
  3. Set aside red cabbage. put more olive oil in pan and cook frozen peas and carrots.
  4. Add in drained chick peas and black beans. Cook a little longer
  5. Add back in red cabbage and ground beef.
  6. serve over cooked rice.
