Ingredients
1/4 cup olive oil
3 garlic cloves, peeled
1 Tb tomato paste
1 35 oz can crushed Italian tomatoes
pinch of sugar
2 basil sprigs
salt and pepper
Preparation
Heat oil in large saucepan. Add garlic and cook over low heat until golden stirring occasionally, about 5 min. Add tomato paste and cook, stirring for 1 minute. Add undrained tomatoes. Stir in sugar and basil, salt and pepper and bring to boi;. Simmer over low heat, stirring occasionally, until it thickens and is reduced to 3 cups, about 30 minutes. Check seasonings. Discard basil and garlic.
