Ingredients
3 lb flat iron steak
Rub:
2 Tbsp Salt
1 Tbsp. Pepper
2 Tbsp smoked Paprika
1 Tbsp cumin
1 Tbsp dry mustard
1 tbsp garlic powder
2 Tbsp dark brown sugar
1 tsp ground red pepper
1 large sweet onion
2 green peppers
1 pkg. shredded Mexican cheese
2 Tbsp. Olive oil
Flour tortillas
Sour cream (optional)
Tomatillo salsa:
10 tomatillos
¼ cup packed fresh cilantro
7 large green onions w/ ½ stems
2 cloves garlic
1 tsp honey
zest of 1 lime
2 fresh grilled jalapeno peppers peeled and chopped
Preparation
1.Make tomatillo salsa by grilling tomatillo’s and jalapeno’s until skins just start to break. 2. Place tomatillo’s in bowl and break up with spoon. 3. Peel jalapenos, removing seeds and chop. Add to bowl. 4.Add fresh cilantro, chopped green onions,garlic,honey, and lime zest.Set aside 5. Sauté onion in olive oil over medium low heat for 5 minutes 6.Add green pepper and cook until done drain and set aside 7.Wash steak and dry with paper towels 8.Rub steak with seasoning rub on both sides 9.Grill or Bake until temperature reaches 150 degrees 10.Wrap steak with aluminum foil. Let rest for several minutes 11.Slice steak against the grain 12.Place meat slices in bowl 13.Arrange tortillas onto grill heating them each side for 30 seconds 14.Line up ingredients for fans to make their own fajita filling flour tortillas with steak, onion, green pepper, cheese, tomatillo salsa and sour cream
