Ingredients
1 lb box Farfalle Pasta
1 bag fresh spinach
2 beefsteak tomatoes, diced
1 yellow bell pepper, diced
Crumbled Feta Cheese to taste
1/2 cup olive oil
1/3 cup fresh lemon juice
2 tsp dried oregano
1 tsp fresh thyme leaves
1 tsp salt
1/8 tsp pepper
1 clove garlic, minced
Preparation
- Cook pasta according to box directions, in a large pot. When almost finished, add spinach to water with pasta. Drain completely and rinse both with cold water. Return to the large pot.
- Add all the vegetables and mix.
- In a separate bowl mix all remaining ingredients for dressing - except for the cheese.
- Pour over pasta and vegetable mixture. Stir thoroughly. Add cheese and stir again.
- Serve cold.
