Ingredients

1 lb box Farfalle Pasta

1 bag fresh spinach

2 beefsteak tomatoes, diced

1 yellow bell pepper, diced

Crumbled Feta Cheese to taste

1/2 cup olive oil

1/3 cup fresh lemon juice

2 tsp dried oregano

1 tsp fresh thyme leaves

1 tsp salt

1/8 tsp pepper

1 clove garlic, minced

Preparation

  1. Cook pasta according to box directions, in a large pot. When almost finished, add spinach to water with pasta. Drain completely and rinse both with cold water. Return to the large pot.
  2. Add all the vegetables and mix.
  3. In a separate bowl mix all remaining ingredients for dressing - except for the cheese.
  4. Pour over pasta and vegetable mixture. Stir thoroughly. Add cheese and stir again.
  5. Serve cold.
