Ingredients
1/4 cup crushed All-Bran cereal
1/2 cup whole wheat flour
1/2 cup all-purpose flour
1 1/3 cup corn meal
2 tbsp dark brown sugar
4 tsp baking powder
1/2 tsp sea salt
1/2 cup finely chopped hot pepper
1/2 cup plus a dash of egg substitute
1 cup evaporated milk
4 tbsp olive oil
Preparation
Preheat oven to 400 F.
Mix all dry ingredients in a large bowl, then stir in hot pepper. Mix in the egg substitute, evaporated milk, and olive oil gently but well.
In a muffin pan, fill each depression 3/4 of the way with the batter. Bake 15 minutes, then sprinkle grated cheese (I used cheddar and mozzarella) on top and return to oven and bake for another 4 minutes. Broil for 1 minute, remove from oven, allow to sit in pan for 5 minutes, and then remove and let cool on a wire rack.
