Ingredients

FANTASTIC PORK FAJITAS

1 lb. boneless lean pork

2 tbsp. vinegar

2 tbsp. orange juice

2 cloves garlic, minced

1 tsp. dried oregano, crushed

1/2 tsp. ground cumin

1 tsp. seasoned salt

1/4 tsp. bottled hot pepper sauce

1 tbsp. cooking oil

1 med. onion, thinly sliced & separated into rings

1 med. green pepper, thinly sliced into bite size strips

1 pkg. flour tortillas

Shredded lettuce (opt.)

Sliced green onion (opt.)

Salsa (opt.)

Preparation

Step 1: For easier slicing, partially freeze pork. Slice pork into thin, bite size strips.

Step 2: In medium bowl, combine vinegar, orange juice, garlic, oregano, cumin, salt and hot pepper sauce. Add pork, stirring to coat. Let stand 10 minutes.

Step 3: In a large skillet, heat oil over medium high heat for about 1 minute. Add pork, onion and green pepper. Stir fry about 5 minutes or until pork is no longer pink and vegetables are crisp tender.

Step 4: To serve, immediately fill tortilla with pork mixture. Roll up fajitas. If desired, top with lettuce, green onion and salsa.
