Ingredients
2 TB olive or peanut oil
3 cloves garlic chopped fine
1 tsp fresh ginger chopped fine
1 onion chopped
1 red bell pepper chopped
2 TB curry powder
1/4 tsp black pepper
1 boneless chicken breast 1" chunks
1 butternut squash peeled 1" chunks
1 28-ounce can crushed tomatoes
1 tsp sugar
Optional: 1 cup fresh chopped greens and stems (ie spinach leaves, collards, mustard greens, etc.)
Preparation
- In a large 2-quart pot, heat 1 TB oil on medium heat.
- Add onion and bell pepper, stirring 5 minutes.
- Add garlic and ginger, stirring until garlic is light brown
- Add remaining 1 TB oil.
- Stir in curry powder
- Add black pepper
- Put chicken breast, sauté until done
- Add butternut squash
- Pour in crushed tomatoes
- Turn heat to high and bring to a boil
- Add sugar, stir
- Add greens (optional)
- Turn heat to low and simmer for 20-30 minutes
Serve over rice and/or pita bread.
