Ingredients
2T. olive oil
½ small sweet onion chopped
½ green bell pepper chopped
2 or 3 stalks celery chopped
1 medium zucchini or summer squash chopped
1 28oz. can petite diced tomatoes undrained
1 can garbanzo beans drained and rinsed
1 cup fresh corn
2 T. red wine vinegar
1 t. sugar
2 T. chili powder
½ t. cinnamon
½ t. allspice
½ t. oregano
½ t. basil
1 t. cumin
1 t. parsley flakes
1 bay leaf
½ t salt
6 oz. beer (1/2 bottle)
Preparation
In a 4-6 qt. pot, sauté onion, bell pepper, celery and squash in olive oil till tender, stirring occasionally. Stir in undrained tomatoes, corn, drained and rinsed garbanzos and remaining seasonings (not beer). Bring to a boil and simmer, covered about 15-30 min. Stir in beer and simmer uncovered till desired consistency.
