Ingredients
4-5 large potatoes washed and peeled
1 pkg cream cheese softened
1.5 cups lite mayonaise
1/3 cup petit peas
1 small onion diced finely
1 handful of fresh dill chopped
1/2 cup crispy bacon, chopped
1 T bacon grease
Salt and Pepper to taste
Preparation
boil potatoes to desired doneness. rinse and set to side. Fry bacon in medium pan reserving 1 T of the bacon grease. Drain bacon on paper towels to remove excess grease and set to side. Saute onies briefly untily just start to turn translucent. In same pan add the softened cream cheese and mayonaise. Stir constantly over low heat until melted and blended together. Combine potatoes, cream cheese mixture, and season with salt and pepper to taste. Add bacon, dill, and peas. fold lightly to combine. Adjust seasoning. Refrigerate or serve warm.
