Ingredients
red potatoes (as many as deisred)
shredded cheese (2-3 handfulls)
chopped onion (as desired)
minced garlic (as desired)
butter (1T)
sour cream (4 T)
Preparation
Slice potatoes very thinly. In a lightly greased aluminum foil bag, or tin, combine potatoes, and desired amounts of onion and minced garlic, and 1 T of butter. Cover with aluminum foil. Cook over meduim heat, for approximately 30 - 45 minutes, until potatoes are tender. Peel back foil lid, and add sour cream. Top with shredded cheese. Close foil lid to allow cheese to melt. Stir and serve!
